Taco, burrito, what’s hangin’ out of Phelps’ Speedo, he’s got bubbles. (clap, clap, clap, clap) Bubbles. And, not of the bong variety. These stem from the shrimp taco blend.
- 1/2 pound of shrimp
- 1 teaspoon of cumin
- 1 teaspoon of coriander
- 1 teaspoon of chili powder
- Juice of one lime
- 1 tablespoon of EVOO
- ¼ cup chopped onion
- 1 garlic clove
- ¼ cup chopped pepper
- Wheat tortillas (because you need to lose a few)
- Tomatillo Salsa (we recommend HT Trader’s)
- Chopped tomatoes
- Broccoli slaw (gives it some crunch)
Marinate the shrimp with the first four ingredients. Make sure they are dowsed in spices. Mimic Bubba Gump, “You can barbecue it, boil it, broil it, bake it, saute it. Dey’s uh, shrimp-kabobs, shrimp creole, shrimp gumbo. Pan fried, deep fried, stir-fried. There’s pineapple shrimp, lemon shrimp, coconut shrimp, pepper shrimp … ”
On a medium-high skillet, heat up the EVOO and cook up the onion, garlic and peppers. Once the onion looks translucent, add the shrimp and cook until they are pink.
Heat the tortillas in the microwave for less than 30 seconds. Top the tortilla with the shrimp, onion and pepper mixture. Then, add the toppings.
Warning: Take extra precaution if you plan on wearing a Speedo after this meal.
