Lighter Take on Chicken Parm
Craving breaded, creamy succulent chicken parmesan atop of enough noodles to feed a small family? I’ll bite. Whoa, hold off Carb Carol! Do we need to remind you that it takes hours of jean exercises to squash your folds into your favorite skinny Sevens? It’s like watching a snake swallow a possum, girlfriend. Never fear, here’s a healthier alternative to chicken parmesan, fiber added and calories reduced.
Chicken in a Chunky Tomato and White Bean Sauce
- 1 tablespoon of minced garlic
- ½ large chopped onion
- ½ container of sliced mushrooms
- 2 chicken breasts
- 1 can of tomatoes (undrained)
- ½ can of white beans (a fiber-friendly substitute to noodles)
In a large skillet coated with olive oil, sauté garlic, onions and mushrooms. Coat the chicken breasts in olive oil and Italian seasonings (basil, parsley, oregano). Add the chicken to the skillet. Add the can of tomatoes. Simmer for about 4-5 minutes. Flip the chicken. Simmer for about 4-5 more minutes. Add the white beans. Cut into the chicken to make sure it’s cooked. Top with parmesan cheese and serve.
