Christmas Green Bean Salad

I hope everyone had a wonderful Christmas. I certainly did. Here are some highlights:

For our appetizer tonight, we are featuring Dorothy, Mr. Wilson and Mimi.

Our entree includes champagne paired with a husband by the fire topped with Christmas presents

You can choose from a variety of side dishes including hanging out with family or this here green bean salad

Christmas Green Bean Salad

  • 1-2 pounds of fresh green beans, stems removed
  • Container of cherry tomatoes, halved
  • 4 ounces of crumbled feta cheese
  • Balsamic vinaigrette

Boil a large pot of water. Fill another large bowl with ice cold water. Boil the green beans for about 7-9 minutes. Place cooked green beans into the ice water to stop them from cooking and so they retain their green Christmas color. Transfer the green beans to a serving bowl. Cut tomatoes in halves. Combine with green beans.

To make the vinaigrette:

Mix ½ cup of olive oil with 2-3 tablespoons of balsamic vinegar. Add a tablespoon of Dijon mustard. Pour vinaigrette over the green beans and tomatoes. Add feta cheese and toss.

    It really looks like you enjoyed a delightful Christmas….canoeing looks like lots of fun. The salad will be perfect for New Years buffet.
