This is not the Iditarod. I am not a sled. Do I look like a musher? Last time I checked you were not a sled dog. There is no snow on the ground.

Simple Frittata for Two
My favorite NYC friend recommended frittatas because they’re simple, easy and fairly good for you if vegetables are added. I gave it a shot, and it was quite the reprieve from our regular pasta, beef, chicken, or fish dinners. Plus, the added protein will help you keep up with your sled dog of a pooch.
- 1 tablespoon of olive oil
- ½ chopped green pepper
- ½ chopped onion
- ½ container of sliced mushrooms
- 5 large eggs
- ¼ cup of half and half
- 1 teaspoon of paprika
- ¼ shredded cheese blend
Preheat the oven to 350 degrees. Using a 10-inch frying pan, sauté the pepper, onion and mushrooms in olive oil. In a separate bowl. Beat the eggs. Combine the half and half. Add the paprika. Add egg mixture to vegetables, sprinkle the cheese on top and let it sit. Place the frying pan in the oven and bake for 15-20 minutes until the top is somewhat brown.
