Taco Night

Let me tell you a little bit about my big brother. He can finish two over-stuffed tacos before the ‘Puter Hub takes his first bite. That’s why we call him the Hoover. It was a better fit than Dyson. Perhaps, Dyson will be his first born. My brother doesn’t travel with a suitcase, but a postal box. He brings Mr. Wilson, his all-American, six-toed canine, everywhere. He can sell ice to an Eskimoe. He can sell sand to a desert. He can sell water to an ocean. He is a jack of all trades. From running to making vodka out of sweet potatoes … he can do it all. He also likes to talk to himself in front of the mirror for hours at time. In his own mind, I believe he thinks he can walk on water.

He’s the best customer when it comes to food, however, as he’ll eat anything and everything in sight. As a cook, it’s quite the compliment so we made tacos.

Soft Tilapia Tacos with Avocado Cream Sauce


  • 2 lbs. of tilapia
  • 2-3 tablespoons of blackening seasoning
  • 2 tablespoons of olive oil

Drizzle tilapia with olive oil. Rub blackening season on the filets until covered. You can find pre-made blackening seasoning at your local gourmet grocer.

In a large skillet, heat a tablespoon of olive oil. Sear filets for 2-3 minutes on each side. The fish should pretty much fall apart which makes it fit perfectly into taco form.

Toppings – Prepare toppings before you cook the fish.

  • 2 wheat tortillas per person (3 if your name is Russell)
  • Romaine lettuce
  • Tomatoes
  • Red onions
  • Green pepper
  • Cilantro
  • Salsa
  • Shredded cheddar cheese

Heat the tortillas in the microwave for 30 seconds with a damp paper towel on top. This keeps the moisture in. Decorate your taco as you desire adding lettuce, fish, peppers, tomatoes, etc. Then, dollop with the avocado aioli.

Avocado Sauce

  • 1 large avocado
  • 2 tablespoons of sour cream
  • Juice of one lime

Combine in a bowl. Using an immersion blender or food processor, blend.

The ‘Puter Hub takes his first bite.

And, Russell finishes his last bite.

    We keep saying we need to eat more fish. I always forget about making fish tacos! May have to have this for dinner tonight. Thanks!
