Velociraptors and Zucchini

Ever have one of those days where a velociraptor just jumps out of your mouth and starts attacking? Yeah, that was me last Wednesday. It was like a scene from Alien. Someone should have just shoved these zucchini logs into my mouth to shut me up. Too bad they weren’t readily available.

Garlicky Zucchini

  • 2 tablespoons of olive oil
  • 2 logs of zucchini or more, sliced thin (can we call them logs?)
  • 3 cloves of chopped garlic
  • 2 tablespoons of butter
  • Parmesan cheese

Slice the zucchini into thin discs. Heat olive oil in the skillet on medium. Add zucchini and garlic. Add butter. Saute until you can see the zucchini seeds and the middle is translucent. Sprinkle parmesan cheese on top.
